  • 2 tbsp neutral cooking oil

  • 2 tsp Shaoxing wine
  • 1 tbsp brown sugar

Instructions

  1. Start by scoring the chicken breasts with shallow cuts about ½ inch apart, no deeper than ⅓ inch. Mix the oyster sauce and Shaoxing wine in a small bowl, then coat the chicken thoroughly. Let it marinate for 20 minutes to soak up the flavors.
  2. Cut the broccoli into bite-sized florets and the scallions into 2-inch pieces. Roughly chop the garlic cloves to release their bold flavor.
  3. Heat 1 tablespoon of oil in a large skillet over medium-high heat until shimmering. Add the chicken and cook undisturbed for about 3 minutes per side. This will give the chicken a lightly charred, smoky crust. Once done, remove the chicken from the pan and let it rest.
