- Start by scoring the chicken breasts with shallow cuts about ½ inch apart, no deeper than ⅓ inch. Mix the oyster sauce and Shaoxing wine in a small bowl, then coat the chicken thoroughly. Let it marinate for 20 minutes to soak up the flavors.
- Cut the broccoli into bite-sized florets and the scallions into 2-inch pieces. Roughly chop the garlic cloves to release their bold flavor.
