For the Salad:

  • 3 cups romaine lettuce chopped
  • 1 cup shredded red cabbage
  • 1 cup shredded white cabbage
  • 1 medium carrot julienne sliced
  • 1 garden cucumber julienne sliced
  • ½ red bell pepper julienne sliced
  • 1 medium pink onion thinly sliced
  • 1 cup cherry tomatoes sliced in half
  • ¼ cup fresh cilantro
  • ¼ cup roasted peanuts roughly chopped
  • ¼ cup alfalfa sprouts

For Dressing

  • 1 cup Thai-Inspired Peanut Dressing

Instructions
 

  • Wash and dry all vegetables. Chop romaine lettuce, shred red and white cabbage, and julienne the carrots and cucumber. Slice the bell pepper, pink onion, and cherry tomatoes.
  • In a large salad bowl, combine the romaine lettuce, cabbages, carrots, cucumber, bell pepper, onion, cherry tomatoes, and alfalfa sprouts.
  • Drizzle the pre-made Thai-Inspired Peanut Dressing over the salad. Toss gently to coat the vegetables evenly.
  • Sprinkle roasted peanuts and fresh cilantro over the top for added crunch and flavor.
  • Serve immediately as a light meal or a side dish. Enjoy the fresh, vibrant flavors!

Notes

Add grilled chicken, shrimp, or tofu for a heartier version of this salad.
A mandoline makes slicing carrots and cucumber quick and uniform, but a sharp knife works just as well if you prefer.
