For the Salad:
- 3 cups romaine lettuce chopped
- 1 cup shredded red cabbage
- 1 cup shredded white cabbage
- 1 medium carrot julienne sliced
- 1 garden cucumber julienne sliced
- ½ red bell pepper julienne sliced
- 1 medium pink onion thinly sliced
- 1 cup cherry tomatoes sliced in half
- ¼ cup fresh cilantro
- ¼ cup roasted peanuts roughly chopped
- ¼ cup alfalfa sprouts
For Dressing
- 1 cup Thai-Inspired Peanut Dressing
Wash and dry all vegetables. Chop romaine lettuce, shred red and white cabbage, and julienne the carrots and cucumber. Slice the bell pepper, pink onion, and cherry tomatoes.
In a large salad bowl, combine the romaine lettuce, cabbages, carrots, cucumber, bell pepper, onion, cherry tomatoes, and alfalfa sprouts.
Drizzle the pre-made Thai-Inspired Peanut Dressing over the salad. Toss gently to coat the vegetables evenly.
